Mint and Carob Slice (adapted from tried & true cookbook)

This is one of my favourite recipes to make as it’s so quick and easy plus it tastes so good! It will

keep in an airtight container for a couple of days if it survives being eaten in one go!

 

1 cup dates softened in boiling water

3 tablespoons honey

1/3 cup oil

1 teaspoon vanilla essence

1 teaspoon peppermint essence

1/2 teaspoon salt

1/4 cup carob powder

1 cup juice or water

1 cup blended oats 

1 cup blended sunflower seeds

1 cup wholemeal flour

1 cup desiccated coconut

1/2 cup rasins (optional)

1/2 cup chopped walnuts (optional)

 

Step 1: Put drained dates, honey, oil, vanilla and peppermint essence, salt, carob powder, and juice or water in a blender, and blend to a smooth paste.

Step 2: Pour into a big bowl and then add remaining ingredients. Mix, and put into an oiled slice tin.

Step 3: Bake at 180°C in a pre-heated oven for 20-30 minutes or until it feels firm to the touch. Ice if desired.

 

Tip: Top up date water to make 1 cup and use instead of juice.

 

 

Icing:

 

Ingredients:

cup icing sugar

cup water

tablespoon oil

1 tablespoon lemon rind and juice

1/8 cup desiccated coconut

 

Step 1: Mix everything together and spread onto slice. Wait for it to cool and harden and then slice and enjoy!

Jammy bears

Sweet, gooey jam, sandwiched between subtle almond biscuits. Sounds like my kind of treat!

 

2 cups wholemeal flour, sifted

1 1/2 cups raw almonds, ground

1 teaspoon coriander

Pinch of salt

1/3 cup oil

1/3 cup honey

1/4 c water

Method For Biscuits:

 

1. Place dry ingredients in a bowl and mix well. 

2. Combine wet ingredients separately, then add to dry ingredients. 

3. Roll dough out and use cookie cutters to cut circles. On half of the circles, use a bear shaped cookie cutter to cut a bear shape out of the centre.

4. Lay all cookies on a non-stick baking tray and bake at 180 C for 15-20 mins. Watch they don’t burn. 

Fruit Jam:

2 cups fresh or frozen berries

2 tablespoons honey

2 tablespoons cornflour

 

Method For Jam:

1. Place all ingredients in a pan, combine well, making sure to mash the berries. Heat on high, stirring continually, until thick. 

2. Sandwich hot jam between the biscuits 

and leave to set.

 

Tip:

Try using different cookie cutters 

to make more fun shapes!

Banana cookies

These are too simple and too delicious! I love making them for breakfast as they are really filling

and healthy too.

 

(Serves 1. Multiply as many times as needed.)

 

1 banana, mashed

1 cup oats

1/4 c coconut

1/4 c dried fruit (optional)

1 tsp vanilla

1/2 tsp salt

 

Mix all ingredients together. Spoon onto baking tray and flatten. Bake at 180 C for 20 minutes or until golden brown.

Lemon velvet Pie

Can you tell by now that I love simple recipes? Well, here's another one. It looks and tastes so good

for such little effort. That's a tick for me!

Base:

1 c rolled oats

1/2 c cashews

1/2 c coconut

1/2 c dates, softened in hot water

1 tbsp honey

1/2 c water

 

Blend oats, cashews and coconut together. Add the rest of the ingredients and blend until it starts to form a ball. Press into a pie dish and bake at 180 C for about 20 minutes.

Slice:

2 tins pineapple, drained

1 orange, peeled

1/4 c honey

1/4 c cornflour

1/4 c lemon juice

2 tbsp oil

1 tsp lemon peel

1/2 tsp salt

1/2 c water

 

Blend altogether until smooth. Pour into a saucepan and heat until thickened, stirring constantly. Pour onto the pie crust and sprinkle coconut on top. Chill in the fridge for at least a few hours until set.

Apple oat casserole

Steaming hot with a delicious vanilla fragrance wafting through the kitchen... How does that sound

for a wonderful, warming breakfast dish?

 

2 c rolled oats

1 c coconut

1 c rasins

2 c grated apple

2 c soymilk

1 tsp vanilla essence

1 tsp salt

 

Mix all ingredients together well and place in a casserole dish. Let stand for 30 minutes before cooking. Bake at 180 C for about an hour.
